Good post! I feel like part of the answer to the title question is, particularly in interpersonal relationships, the fact that you feel the need to establish boundaries, alerts trespassing folks to the reality that you’ve been feeling intruded upon in some way. Rather than respect this, they feel defensive, and want to establish that their behavior was appropriate and you’re being ungenerous with them, or changing the rules of the game in an unfair way.
